Maters of wine 9th International Symposium III

二日目の深夜。ホテルに戻ってから翌日のプレゼンテーションの練習を鹿取さんとやる。最後の最後まで校正をして、翌朝も最後の練習をやることにして、風呂に入って就寝。

翌朝、8時からのパワー・ブレックファーストと朝の細菌についてのパネル・ディスカッションは欠席して(聴きたかった!)、ホテルで再度プレゼンテーションの練習をやり、会場入りしたあとはテイスティングに提供するワインのテイスティング。1本1本72本の確認。その後プレゼンテーションの会場にて最終データの入力と画面の確認。そうこうしているうちにいよいよ”New Terroir” のシンポジウムの時間となりました。鹿取さんは、前日から緊張するーッと言ってましたがプレゼンは慣れた様子。私は、くれぐれも時間厳守を言い渡されていたので校正に校正を重ねて削りに削って要点だけをまとめた原稿を読みつつドローン撮影した須坂市の地形やブドウ畑、畑の写真をパワポで映しながらブドウ栽培とワイン醸造についての話をしました。発表の間参加者はワインのテイスティングをします。日本からは、小布施ワイナリーのカベルネ・フラン2016と楠わいなりーのシャルドネ2014樽熟成CSを提供しました。プレゼンのお話を頂いた時は、TEDみたいなプレゼンをやって、言いたいことを詰め込んで、と考えていたのですが、現実はそうそう妄想どおりには行きません。

今回のプレゼンで意義のあったことといえば、
① 日本でワインを作っているの? レベルの人の認識を変えられたこと。
② 『甲州』という知識しかなかったレベルの人の認識を変えられたこと。
③ 日本のワイン? レベルの人の認識を変えられたこと。
④ 日本でも良いワインが作られているね、という認識をインプットできたこと。
⑤ 日本の過酷な気象条件で栽培家が非常な努力をして作っている事の知識をインプットできたこと等が挙げられると思います。
イギリス、チリやアルゼンチと違って、全く知られていない『JAPAN』や『NAGANO』を知識としてインプットできたことは良かったと思います。

更に、最終日の朝の非公式ではあるものの『JAPAN WINE TASTING』にて世界の専門家にその品質をあらためてアピールできたのは、今後につながる一歩だったと思います。

プレゼンで印象的だったのは、スエーデンでのぶどう栽培と中国のワイン造りでした。特に中国では、日本以上に過酷な環境でブドウ栽培が行われています。これは資本がかかっているなと思っていたら、なんと1本300ユーロで完売だとか。ちょっと変わった味わいでしたが、中国産ワインを支えるマーケットがそこにあることに感心しました。

さて、ようやく荷が降りたあとは残りのシンポジウムを満喫します。プレゼンテーションのあとは、アルゼンチンワインのテイスティングを兼ねたランチから。

その後午後のパネルディスカッション。アデレード大学で学んでいた当時ぶどう栽培学の助手をしていたマルディ(女性)がオーストラリアワイン研究所の上級栽培学者兼オーストラリア醸造栽培協会の会長になって、サステナビリティのスピーカーとして参加していて驚くとともに再会を喜び合いました。当時剪定を教えてもらったり、栽培学の講義も担当していました。 再会といえば、プレゼンテーションの後何人かから声を掛けられましたが、良かったよーとか、ワイン美味しかったね、おめでとう、などと言うものでしたが、当時の同級生のスイス人がマスター・オブ・ワインになっていて、覚えてる?とニコニコと声を掛けて来たのには驚きました。 どこかで見たことがあるなと名札をみたら、ああ、あいつか! 同級生ではないか! 今はスイスのワイン商社で働いているとか。なかなかみんな活躍してるなと感慨深いものがありました。

午後のパネルディスカッションが終わって5時半には割り振られたバスに乗って、グループでワイナリーへ移動。450人が20グループほどに分かれてのワイナリー訪問です。私はヌーンさん夫婦と同じグループになりました。 私のグループが訪ねたのは, あのペルノー・リカール社のCampo Viejo。ほとんどの施設が地下に作られたワイナリーで、この会社としては3つ目のワイナリーだとか。Ysiosもグループ会社です。 ともかくその規模に驚愕。樽部屋には7万個の樽に入ったワインが。またその下の瓶貯蔵庫には3百万本のワインが寝ているとか。規模が! シャンパーニュでは数十万本が、という会社がいくつかありましたがそれを遥かに超える規模。 歓迎のアペリティフには有名シャンパーニュがふんだんに注がれ、その後工場見学。見学の途中でも試験醸造のワインのテイスティング。試験醸造のラボでさえ、日本の小規模ワイナリーほどの規模があります。 夕食はサンセバスチャンの二つ星レストランのシェフを呼んで調理してもらったとか。 宴は11時過ぎまで続きようやくホテルに戻ったのは12時過ぎ。翌日は他のグループに聞いたら、戻ったのは1時半とか、ボルドーの80年代のグラン・ヴァンが振る舞われたとか。スペインのおもてなしに驚くとともに、ワインビジネスのあり方に驚くばかりです。

After returning to the hotel at midnight, Miyuki san and I practiced the next day’s presentation. We decided to have it again in the next morning and went back room to take bath and sleep.

We skipped the power breakfast on the second day and the panel discussion about the microbes preparing for the presentation and checking the 72 bottles of wines for tasting. In the presentation area, we put the last data together and checked the screen. Miyuki san seemed very nervous but once the panel discussion began she made it very smoothly. I introduced my grapegrowing in our region and wine making. As the time was very much limited, I edited my presentation to the minimum with the drone short movie of Suzaka and the environment as well as a few slides of my vineyards and winemaking. When I had been asked about the presentation before, I though I would make it like a TED presentation but in fact I had no choice but to talk along my edited script by showing the slides.

Although it was a short presentation, to my opinion, we had successfully put certain ideas to the audiences of the followings;
1.that we make wines in Japan,
2.that we make wines with not only Koshu but wide range of varieties,
3.that we make quality wines,
4.that we make wines, some of which are in very high quality,
5.that we grow grapes and make wines with great passion and endless efforts under sever conditions, and
6.so on.

We were happy to make the audiences recognized Japanese Wines which were quite new to them compared to the wines from England, Chile and/or Argentine.

In addition, many masters of wine had good impression of many Japanese wines introduced at the unofficial Japanese Wine tasting session on the last day.

A few of the impressive presentation by others were the grape growing in Sweden and in China. They grow grapes in much harder condition than we have in Japan, and that the wines made in China presented seemed crafted very costly and sold at 300 euros per bottle. But it is sold out! It means there is a market for such wines.

After finishing our presentation, we were able to enjoy the rest of the Symposium. First one was the Argentine Lunch with the wine tasting.

In the afternoon panel discussion about the sustainable winemaking, Mardi Longbottom from Adelaide had a presentation. She was assistant at the Adelaide University Viticulture courses when I was there and she taught me pruning and had some lecture on viticulture. We were happy to see each other again. She now became a senior viticulturist of Australain Wine and Research Institute and the President of the Society of Australian Oenology and Viticulture. She had gained PhD and established her carrier.

Talking about the reunion, there was a surprise meeting at the conference. After our presentation, many people came to us and congratulated presentations and wines and
to my surprise, I met a Swiss classmate among them. He is now Master of Wine and worked for a Swiss wine trading company. He came to me smiling and introduced himself to me. I soon recognized him by watching his name tag. What a surprise ! Many people I met in Adelaide are doing great now!

At 5:30pm, we departed for dinner. All the participants were allocated certain numbers from number one to around 20 each of which forms a group. Each group was taken to certain winery in Rioja for dinner. My number was 18 same as Mr. and Mrs. Noon and were taken to Camp Viejo one of the group wineries owned by Ricard & Perneau goup. Most of the building of this winery was berried under the ground. The Bodegas Ysios belongs to this company, too. The size was astonishingly gigantic. They have 70,000 barrels in the barrel storage and under this storage there is around 3 million bottled wines. There are some champangne houses with hundreds of thousand bottles in the crayers in Champagne but the size here is far beyond bigger. During the winery tour, we tasted several experimental wines in their laboratory room but even the laboratory facility is bigger than a few smallest sized wineries in Japan.The dinner was prepared by Michellin two stars restaurant chef from San Sebastian. The dinner and the wines were fantastic and was over almost midnight. We came back hotel at around 0:30am that was rather earlier. Other people told us on the following day that they had come back after 1:30am. Some other people said that the Bordeaux Grand Vins had been served from 80s. What a sensational Spanish hospitality ! The size of wine business here was beyond my imagination.
