投稿の詳細: 初仕込み First crushing

昨日製造免許交付を受けました。
葡萄を植えて8年目、醸造の勉強に
アデレード大学大学院に留学してから
10年目です。ワイナリー設立を目指して
会社を設立したのが昨年12月ですから、
長いようでもあり、またいざ動き始めてからは案外
早かったというのも実感です。

昨日は、製造開始前に要求される書類も用意していて
提出したので早速今日から仕込み開始です。

テレビ局の取材もありましたが、何せ初めてのこと
ばかりなので、大分手間取り、てこずりましたが、
何とか仕込初日は終わりました。

経験を重ねて、新しいワイナリーと機械設備にも
慣れ、要領を得てより迅速に進められるように
なりたいと思います。

ところで、10月20日の大阪のワイン関西でお世話に
なった皆様、ありがとうございました。

I received the winemaking permit from the National
Tax Agency yesterday. It is 8th year since
I planted vines and 10th year since I had been to
Adelaide University to study winemaking and grapegrowing.
I registered a company for the winery last December. So I feel
it a long journey but at the same time it did not take much
time since I decided to move forward.

I submitted other documents such as the description of winemaking
process and the details of the containers to NTA required to start
winemaking after being granted the permit. So I am lucky enough
to start winemaking just one day after the permission date.

Local TV station came to shoot the first vintage today but
I was not able to show good scenes because the process took more
time than I had expected. No wonder it was the first day I
did the process with the new machines in the new environment.
It was a bit difficult day for TV shooting but any how I finished
the memorable day in fatigue.

I wish to realize much smoother operation after certain
experiences and getting accustomed to the new facilities
as soon as possible.

By the way, I thank you all the people for coming and tasting
my wines. I was so happy to have received orders and inquiries.
