The birth of the wine.

そのとはどれか。私が心に描いている
そのワインです。

初ヴィンテージの（といっても
ここ1,2年以内にリリースするのは
ほとんど初ヴィンテージになるのですが）
ソーヴィニオン・ブランです。

セミヨン15％程度のブレンドですが、
SBが85％程度なので、SBとしての
リリースです。
今後はもっとセミヨンの比率を上げてゆき
ます。　

シングル・ヴァラエティー（単一葡萄品種）
としてのソーヴィニオン・ブランも
もちろん大好きですが、どうしても
このブレンドを作りたいのです。

なぜなら、このブレンドが日本食に
もっとも合うワインではないかと思うからです。
特に刺身初め新鮮な海の幸に野菜類、
和食全般。もちろん
フレンチやイタリアンにも相性抜群なワインに
なると思うのです。

香りや味に自己主張の強過ぎるワインだったり、
それ自体は優秀なワインでも
魚介類の味を変えてしまうようなものではなく、
それ自体の存在感はありながら、
食事の素材を何も邪魔せず、
食べかつ飲むことの楽しみの
次元をあげることのできるワインが
この白ワインだと思うのです。

そのレベルに達するにはもう少し時間が
かかるでしょうが、そんなワインを
作りたいと思います。

120本程度出来ました。現在瓶熟中ですので
リリースはもう少し先になります。

Birth of the wine. So which wine?
That's the one I am maturing in my mind.
It's Sauvignon Blanc/Semillon blend.

Though it's a blend, I call it Sauvignon Blanc
because Semillon content is only around 15%. I will
increase Semillon portion more in future.

This is my first vintage Sauvignon Blanc/Semillon.
Most of the wines to be released in these two years
are first vintages anyhow.

Of course I love single variety SB but I want to
make this blending in any way because I believe
that this blend is the best matching wine with
Japanese food. It can go very well with
sashimi and other seafood, Japanese food in general,
French and Italian food as well.

It's not the wine which speaks itself too much
or which has very outstanding character in its
aroma and palate. Some wines even change the taste
of food on plate. But the blend is different.
It is the wine that has its own personality but
it does not disturb anything on palate and imporve
the joy of eating and drinking at table.

It takes some more time for my wine to reach such
level but it is one of the reasons I started
winemaking. I will try to be more steps closer to
such wine.

The first vintage of Sauvignon Blanc is only 120 bottles
that are maturing in bottle now and the release is a few more months away from now.
